Selain mengandung karbohidrat yang tinggi, ubi kayu juga mengandung kalori sebesar 148,0 kal dan mineral-mineral penting seperti calsium (Ca) 33,0 mg, Phospor (P) 40,0 mg serta kandungan vitamin C yang cukup tinggi 30,0 mg.
